Fresh Fennel is one of those unusual vegetables whose each and every part, including the bulb, the stalks, the feathery fronds, and the seeds all have a definite culinary role to play. It is a part of the carrot family and originates from the Mediterranean region where it has been grown and enjoyed since ancient times not only as a food but also as medicine. It is an indispensable component in Italian, French, Middle Eastern, and now Indian cuisine for its unique taste, extraordinary versatility, and invigorating aroma.
Bulb is the largest part which is firm and crunchy, with a sweet flavor and a typical licorice taste which fades greatly when cooked. In raw form, it has a very crunchy and refreshing texture, whereas roasted or braised bulb becomes soft and has caramelized with a very strong savory taste. It is like a totally different vegetable when cooked, yet still recognizable. The stalks, being tough and fibrous, can be used in stocks and soups for their fragrance and flavors.
