Sichuan peppercorns are small, reddish-brown husks, typically 4-5mm in diameter, with a rough outer surface that splits open to reveal a small, black seed. The inner black seed is usually removed before use, as it can impart a bitter flavor, and it's the outer husk that provides the characteristic flavor and numbing sensation. They have a distinctive aroma and taste, often described as citrusy, spicy, and slightly numbing.
